Slow Cooker Butter Chicken

Prepare an incredibly flavorful, mildly spiced Slow Cooker Butter Chicken in a matter of minutes! This increidbly dish is so simple to make and insanely delicious.

Creamy and flavorful, butter chicken is the perfect blend of seasonings without being too spicy; cooked to perfertion in the slow cooker the chicken is juicy and tender.

Made with a flavorful sauce, this recipe tastes just like the original version but is healthier and easier! (Nothing fried here.)

This meal is full of flavor, vibrant in color, and served with a side of naan and rice, making for a delicious meal everyone will love.

This recipe is a healthier twist on this classic dish, and is incredibility simple to make in the crock. Fantastic for busy weeknights.

It’s is one of my favorites to make for friends and family. It’s packed with flavor and the colors are rich and vibrant.

Serve it with Scallion Cilantro Lime Rice (yum!) and of course a side of homemade naan. To complete the meal, I have a slice of chocolate cake ready for each to devour.

INGREDIENTS YOU NEED FOR BUTTER CHICKEN

  • Boneless skinless chicken thighs – you could easily sub for chicken breast, but to make this dish nice and flavorful, go with chicken thighs, you can thank me later.
  • Onion – now I prefer yellow onion, but white onion will work just as fine or even some shallots.
  • Butter – I mean this ingredient can’t be a surprise based on the name of the dish.
  • Tomato Paste
  • Coconut milk
  • Greek Yogurt

DON’T FORGET THE SEASONINGS!

  • Milk
  • Fresh garlic and ginger
  • Curry powder
  • Red curry paste
  • Garam masala
  • Turmeric
  • Cayenne pepper
  • Salt

HOW TO MAKE BUTTER CHICKEN IN THE CROCK POT?

In a mixing bowl whisk together coconut milk, Greek yogurt, cream, tomato paste, garlic, ginger, and all the spices; mix together well until there are no chunks, then set aside.

Lightly spray the inside of your slow cooker with cooking spray. Add the diced onion to the bottom of the slow cooker and top the chicken thighs.

Lastly, pour the tomato/coconut milk over the chicken to make sure the chicken is completely covered. Top the dish with the 4 tablespoons of butter, like pictured below.

Top slow cooker with lid and cook on high for 4 hours. Once the chicken is completely cooked, remove the chicken from the crock pot and coarsely chop.

Then turn the slow cooker to warm and add the chopped chicken back into the slow cooker and stir to incorporate.

Ingredients

  • 3 pounds boneless skinless chicken thighs
  • 1/2 yellow onion finely minced
  • 3 tablespoons butter
  • 4 cloves garlic minced or grated
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons curry powder
  • 1 tablespoon red curry paste
  • 2 tablespoons garam masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 teaspoons salt
  • 6 ounce can tomato paste
  • 14 ounce can coconut milk
  • 1/2 cup Greek yogurt
  • 1/4 cup milk
  • white rice for serving

Instructions

  • Prepare chicken by cutting into bite sized chunks. In mixing bowl whisk together coconut milk, Greek yogurt, cream, tomato paste, garlic, ginger and all the spices. Make sure it is mixed very well and there are no chunks.
  • Lightly spray the inside of your slow cooker with cooking spray. Add the diced onion to the bottom of the slow cooker and top with cut up chicken. Pour the tomato/coconut milk over the chicken to make sure the chicken is completely covered. Top the liquid with butter. Top slow cooker with lid and cook on high for 4 hours or on low for 6 to 8 hours. I stir mine ½ way through cooking time if I remember.
  • Season with salt and pepper, serve over rice topped with chopped cilantro.
