A Simple Greek Vinaigrette Recipe

This super simple Greek Vinaigrette is so easy to make and can go with so many different foods – chicken, salmon, on a salad, on a gyro, on meatballs, the options are endless! It’s so easy to throw together and store in the fridge for any time you need it. We love using it in our Greek Chicken Salad, Greek Orzo Salad and Greek Chicken Meatballs !

What You Will Need

  • Red wine vinegar + Lemon juice: this provides the acidity in the vinaigrette.
  • Kosher salt & pepper: because you always have to spice it a little!
  • Spices (Oregano + Coriander + Garlic powder + Marjoram): love this combination of spices – they come together perfectly here!
  • Garlic: always adding garlic 🙂
  • Dijon mustard: this really helps round out the flavors here!
  • Avocado oil: this oil-based vinaigrette uses avocado oil, but you could most likely use olive oil if you prefer.

Using Greek Vinaigrette As A Marinade

This vinaigrette is a great dressing but it also makes a marinade! We love using it as a chicken marinade but you could also use it for pork. Simply mix the ingredients together, pour it over your meat, and let is marinate for at least 30 minutes. An ideal time frame for a marinade is a few hours. Just don’t let it go longer than 24 hours.

Storing Tips

This vinaigrette can be stored in the refrigerator for about at week. Since there are no binders in this vinaigrette, separation is completely natural. Just shake again before use.

How To Make Greek Vinaigrette

Measure out your ingredients and mix in a jar.

  • 1/4 cup red wine vinegar
  • 1 teaspoon lemon juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 12 teaspoon dried oregano leaves
  • 1/8 teaspoon coriander
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon marjoram
  • 1 teaspoon garlic, minced
  • 1 teaspoon dijon mustard
  • 1/2 cup avocado oil


  1. Add red wine vinegar, lemon juice, kosher salt, ground black pepper, oregano, coriander, garlic powder, marjoram, garlic and dijon to a small bowl.
  2. Slowly add avocado oil while whisking.
  3. Continue whisking until fully combined.
  4. Use in your favorite recipes like these Greek Chicken Meatballs or this Greek Chicken Salad!


Storage: store in an airtight container in the refrigerator for up to 2 weeks – separation will occur just shake to recombine. If your fridge is pretty cold the oils may harden a bit, just let it come to room temp for a bit and it will be fine!
